Well, some details we've learned are that they do crave chaos, and our bargain offers us protection from some of their affects- in Braccia, Cheruvia wasn't able to use her orb against us. But she was able to use the power gained from her bargain, and in Gyeonje, we were still vulnerable to the orb-created plague, even if we had some resistance.
Another important note is that physically possessing the orb doesn't mean ownership- in most cases, that seems to mean we need to persuade the current owner to hand it over, because there are issues with the two alternatives.

According to Viveca, yes, that is what they get from our bargains with them- in addition to being reunited.
And that does seem to be the definition the orbs operate by. Although it's unclear if a new bargain can be struck while the current one is still active.
Makes sense. Seems wild that there's these orbs capable of granting people these impossible wishes and we're the only ones apparently trying to catch them all. Don't get me wrong, we don't need any more complications. But with how the Multiverse works, I'd have expected another group trying something similar. I'm guessing we know as much about how this whole enterprise got founded as we do about the previous crew?

If the orbs are all fragments of a greater whole, they may represent different aspects of that whole.
